A glance at cardamom

Q: What is cardamom? -- Paul Collins, Miami, OhioA: Cardamom is the dried flower of an herb related to ginger. You'll find it in Indian cuisine, mixed with coffee in the Middle East and used in Scandinavian desserts. It comes in two forms: green, which is more delicate and normally used in desserts; and black, which is stronger-tasting and best used in savory dishes. It comes in pod form and ground -- the pods should be removed from dishes before serving (or shell the pods to get the seeds out).(For more information, visit www.foodnetwork.com or write Ask Food Network c/o Viewer Services Culinary Department, Scripps Networks, PO Box 50970, Knoxville, TN 37950.)
