Washing greens

Q: What is the best way to wash greens? There's always grit, no matter what I do. -- Annette Jacobson, Yonkers, N.Y.A: In order to get greens fully clean, soak them in a large bowl of water, swirl them a few times and then lift them out of the water (instead of pouring the water out of the bowl). Repeat, changing the water each time, until there's no more grit visible in the water. Dry the leaves in a salad spinner, or between paper towels.For the sake of freshness, don't wash your greens until right before you plan on using them. If you have to wash them somewhat in advance, wrap them up well in paper towels and place them in a plastic bag.
