Ask Carley: How to handle a wedding buffet

Q: We are having a buffet reception. What's the best way to get everyone fed quickly without creating long lines?

A: Calling one table at a time to the buffet is irritating to the last group called, so ask your caterer to set up two or three identical buffets, depending on how many guests you have, so you can call multiple tables up at once. Yes, you'll have to hire more waiters, but as soon as that initial rush is over, you'll only need a few servers to stick around to man one remaining buffet line.
